Though food in the UK is rightfully criticized, you can find quality — like this Beef Wellington — but it's not cheap.

Chinese
Check out my Singapore Noodles (first attempt). They look more like Pad Thai — I'll do better next time. Btw, Singapore Noodles are Cantonese, despite their name.

French
Coq au Vin. Though not used in this dish, persillade is an indispensible seasoning for chicken.

Japanese
Check out my homemade California Rolls. I was lucky to try Wagyu beef and fugu (pufferfish) during my 2023 trip to Japan — but my favourite was their unagi (freshwater eel).

Jewish-American
Don't visit New York without trying their pastrami. Then send me some because I somehow haven't been there yet.

Middle Eastern
Try mashing some canned chickpeas with sesame seeds, olive oil and garlic for an easy derivative of hummus.
